Ingredients for the Hainanese Chicken
- 1 kilo chicken whole chicken
- 1 tablespoon iodized salt
- 100 grams or 1/2 cup ginger sliced
- 1 piece large white onion sliced
- 5 stalks lemon grass tied into knots
- 1 stalk green onion sliced to 2 inch long
- 1/2 tablespoon pepper
- salt to taste
- 1/4 teaspoon MSG or granulated seasoning to taste
- 12 cups of water
Ingredients for the Hainanese Rice
- 3 cups rice
- 5 cloves garlic minced
- 1 large white onion diced
- 1/4 cup butter or butter compound
- 6 cups chicken broth from the boiled chicken
Ingredients for the Dipping sauce
6 tbsps. cooking oil
5 cloves garlic minced
150 grams grater ginger
1 tbsp. chopped spring onions
2 tbsps. soy sauce
1 tbsp. sesame oil
5 cloves garlic minced
150 grams grater ginger
1 tbsp. chopped spring onions
2 tbsps. soy sauce
1 tbsp. sesame oil
Procedures for the Hainanese Chicken
- Rub the chicken with salt both inside and out.
- Stuff the chicken with half the amount of ginger, lemon grass and onion, then set aside.
- In a medium size pot, combine water, lemon grass, ginger, onion, salt and pepper.
- Bring to a boil then add the chicken and MSG.
- Simmer for about 35 minutes or until the chicken is tender. Turn off heat and let the it cool for a while.
Procedures for the Hainanese Rice
- Wash the rice first then drain.
- Heat butter in a wok.
- Saute onion and garlic until fragrant.
- Put the rice in the wok together with the onion and garlic and saute continuously for 5 minutes.
- Transfer the sauteed rice to the rice cooker and add the chicken broth.
- Cook until the rice is done.
Procedures for the Dipping Sauce
- Heat 6 tablespoons of cooking oil in a small pan.
- Add in 5 cloves minced garlic.
- Add in 150 grams of grated ginger.
- Add in 1 tablespoon of chopped spring onions.
- Pour 2 tablespoons soy sauce.
- Cook for about 2 minutes to infuse the flavor to the ginger.
- Pour 1 tablespoon of sesame oil and turn off heat.
